Welcome to the Motte and Bailey! We are a beautiful countryside pub complete with a front garden overlooking the village green. We are ideally located for local walking and biking groups as we are set along many bridleways with routes that run through Pirton and onto the chilterns.

We love dogs, and they are very welcome to come and enjoy a fresh bowl of water and a doggy treat from the bar!

We have styled the interior with charming decor, and an open fireplace with a beautiful mantelpiece perfect for cold winter nights.

For the warmer months, we have an extensive outdoor garden complete with a pergola and grass area perfect for marquees for weddings and parties, as well as a children’s play area.


The Motte and Bailey has been the site of a pub in the stunning village of Pirton, Hertfordshire since the late 1800s.

Formally the (old) White Horse, it was demolished in 1900, and then rebuilt much as it stands now in 1901.

The name was changed to The Motte and Bailey in 1978 after the castle that once stood on the bury just behind the pub.

After a huge refurbishment in November 2018, Jo and Elliot opened the doors to welcome guests old and new to experience a relaxed friendly atmosphere.

Oliver Sturt

Head Chef

Originally from Hitchin, Oliver prides himself in using seasonal local produce. He has been in the industry for over 15 years and during that time worked in some of the world’s top hotels and restaurants spanning from the United States to the United Kingdom. Oli loves bringing his knowledge back to his home county of Hertfordshire.

Ross Hudson

Sous Chef

Also from Hitchin, Ross studied catering for 3 years and since graduating has had experience in some of London’s top restaurants, hotels and gastro pubs. He is a real young rising star of the industry.
